The Lazy Gal's Guide On How To Make Good Cheese Dip

Remember that little televised football game from last weekend?  Oh, you know, Super Bowl 50?  Well, even though my team (Go Niners), and my husband's team (Ummm, go Cowboys?) we're out of the running, we were able to suck it up and watch the Denver Broncos beat the Carolina Panthers 24-10.  

So, what does this have to do with anything?

To change it up a bit, I figured I'd share a SUPER EASY recipe to the only cheese dip I know how to make.  It's MAD easy folks!  

Before the big game (about 4 hours before) the hubs asked "So what dip do you like?'

Naturally, I said "Cheese dip."

Now, this would mean that we would end up going to the grocery store (which would mean leaving the house) and buying the bottled cheese dip that I'm not too fond of any way.  You all know which ones I'm talking about.

Thank goodness the hubs was pretty set on making our own dips and Super Bowl viewing fare that we didn't have to resort to the store bought kind.  

I only know how to make one kind of cheese dip, and I certainly wouldn't classify it as gourmet, but every time I've made it for folks, it was always a hit... unless they lied to me.

So, here is what you'll need to make my Lazy Gal's Cheese Dip.

  • 8 ounces of your favorite bottled salsa 
  • 8 ounces of your favorite cream cheese
  • a microwavable bowl
  • a spatula
  • a microwave  (see? Lazy!)

I recently discovered this brand of All-Natural Salsa, called Frog Ranch Salsa.  It's super tasty and there's a sleepy frog cowboy with suspenders on the label... which is what really sold me on the product.  

All joking aside, once you open the jar, which was sealed tighter than Fort Knox, (it took me and the hubs a few attempts each before he was finally able to open it) the salsa looked AND smelled great.  I tasted it, and I've dubbed it as my favorite bottled salsa of the moment.  Goldilocks would love this stuff.  Not too hot, and not too mild.  Just the right amount of kick.

I just realized my Goldilocks reference was pretty corny.  

Oh well, Whatevs.

I dumped half of the salsa (8 ounces) into a microwavable bowl and just looked at it a bit.  See?  

Oh, and I had help from the Spatula.

I had a brick of my favorite cream cheese, the classic Original Philadelphia Cream Cheese, took it out of the box and wrapper, and just placed it on top of my bowl of salsa.

Here's the super lazy part.  I placed that bowl in the microwave, and had it nuked for 6 minutes.  Not sure why I went with 6, but it's what I've always done.  Oh, and make sure to put a paper towel over the bowl to prevent splattering.  I totes forgot to do this and had to clean up the inside of the microwave.  Ugh! FML!

Make sure you have oven mitts, a dish towel, or silicone mitts ready to grab the bowl with once the 6 minutes are up.  It's going to be hot, and it's going to look like this.

Ok, so it doesn't look pretty, but like I said, this is FAR FROM GOURMET, but it sure tastes good when it's done.

At this point, grab your spatula and start half-folding and half-mixing (if that's even a thing) the salsa into the cream cheese.

Once you've folded and mixed the salsa and melted cream cheese to a creamy consistency, grab some tortilla chips and dip it right in there!  We decided to try Bucky Badger Tortilla Chips for the first time.  When in Rome, right?

And there you have it.  Cheese dip couldn't get any easier.  10 minutes total for prep and cook time, and that's due to not being able to open the salsa jar right away.

So what's a lazy gal to do after a successful cheese dip that everyone loved??
